The “Oat Mafia” isn’t some underground operation betting on oat seeds, though one farmer, Martin Larsen, literally went underground to track nitrate pollution in drinking water caused by decades of corn and soybean farming. The solution to nitrate pollution? Oats.
Now, 130 Midwest farmers are backing a new oat mill in Albert Lea, Minnesota, hoping to create demand for a crop that can improve soil health, reduce fertilizer runoff, and make farming more sustainable. They’re not replacing corn and soybeans, just adding oats back into the rotation.
