At the Sassy Bagel our focus is on bringing you traditional foods found at NYC Jewish bakeries and delis. Meet the knish.
What is a knish? A knish is a traditional Eastern European and Ashkenazi Jewish snack or hand pie made of a savory filling wrapped inside a thin, baked or fried pastry dough.
Traditional fillings include potato, kasha and cheese.
We are making potato onion knish for market this Saturday. Our dough is made with potato, flour, baking powder, egg and a bit of oil. Most recipes don’t use potatoes in the dough but we love ours because the dough stays very tender.
We bring the knish to market cold and they are best served heated up (350 oven until hot) with a bit of butter on top. They are available for preorder at Country Market in Cary and are first come, first serve at the Grayslake Farmer’s Market.
