🔥🍕 It’s always an amazing time getting lost in the (pizza) sauce with your Preferred team! This round, we got some hands-on time with the Blodgett Oven Company ImVection (and its four independent chambers, which let us cook all kinds of menu items at once with no flavor transfer).
With convection and impingement cooking packed into one ventless oven, there are a whole lot of ways to put this thing to work depending on your menu. This time we put on a show at the 2026 SoCalGas Food Service Equipment Center Expo in Downey, CA! Chef Daniel Chlebowski and Chef James Pate teamed up to create some seriously amazing dishes using the Invoq Combi and Hydrovection Oven from Blodgett Oven Company, the Middleby Marshall LongWave and PS638 Conveyor, the brand new Southbend - Commercial Cooking Equipment Steam Shell, and the AJ Antunes Tortilla Warmer! The food? Absolutely mouthwatering! Huge shoutout to our chefs for making it all happen!
