It’s difficult to explain just how hard it is to bring these Takedas back to life. An hour on the grinder with not one errant scratch. Adjusting for all the wabi sabi sharpening it has seen over the years. Honestly, it’s exhausting. But the reward is a brand new knife with a whole new life and a happy customer. We love the Ace Hardware brand, but can we have an honest conversation about the Resharp sharpening machine. Granted, the employee put the knives in upside down, but still, what the heck?! There are some things that should still be left to actual humans, and knife sharpening is one of them. You could save a few bucks by using the robot, but it will cost you in performance and damage to your knives. We’ve seen it happen too many times. Take them to a pro and keep your knives and alive. Introducing the ! I was gonna call it the cucumber challenge but that apparently is a completely different type of challenge. 😅

How many slices can you chop a 2" cucumber in the shortest time? This will be a good gauge of how sharp your knives are and how edge geometry is just as important as the primary cutting edge. This knife is freshly thinned Fujiwara White 1 working effortlessly. (Bring on the food release crowd!) I thinned this blade while filming my upcoming Knife Sharpening Masterclass.

So get your knives and bandaids ready and give us a tag with your results. I am not a chef so I'm expecting many of you to do way better than my score.
