🍁 Did you know the classic Rule of 86 has been revised?

For years, maple producers have used the Rule of 86 to estimate how many gallons of sap it takes to make one gallon of maple syrup.

The original rule was based on finished syrup at 65° Brix. As the standard for finished maple syrup moved to 66.7° Brix, the calculation needed an update too.

👉 The revised number is 88.2.

So instead of dividing 86 by your sap sugar percentage, use 88.2 for a more accurate estimate of the amount of sap needed to produce a gallon of finished syrup.

🍁 Same simple rule—just updated for today’s maple industry.
