The Wide, Flat Side (Flat Side Up)

The wider surface area contacts more of the food, which means:

* Faster browning
* More even searing
* A deeper, more continuous crust instead of just narrow grill marks
Instead of thin stripes, you get a broader band of caramelization. That means more Maillard reaction—and more flavor.
