PECTINPECTINEX NOT WORKING❓

It breaks down pectin a natural substance that makes juice thick 🧬

But haze is often caused by other particles. These particles are so small that they do not settle on their own 🔬

Why?

Because they carry an electrical charge ⚡️ and repel each other.

This is where fining comes in.

Kieselsol and Chitosan help these particles stick together 🤝 Once they form larger flocs, they become heavy enough to settle out ⬇️ and the juice becomes clearer.

That is why dosage is so important.

❌ Too little - some haze will remain.

❌ Too much - and you can create a stable system again, causing haze to persist.

There is no universal dosage.

🧪 The best approach is to run a few small trials with different concentrations and find the dosage that works best for your product

You don’t need ice 🧊 to make a cocktail.

by: velikanov_ilya.1mpression (THIS IS GOLD! 🏆)

A Huber thermostat allows you to control temperature with an accuracy of ±0.1°C, making every serve identical.

Think of it as a sous-vide machine, but for both heating 🔥 and cooling ❄️ . Instead of water, I use an ethanol-water solution so the bath stays liquid even below 0°C.

By pre-diluting the cocktail and chilling it to the exact serving temperature 🌡️ , there’s no need for stirring, shaking, or ice.

The result:
• Consistent temperature
• Consistent dilution
• Consistent flavor
• Ready to serve in 15 seconds

One of the simplest ways to standardize cocktails🍸 quality behind the bar

Cocktail snacks are becoming part of the experience… and this lemon cloud by is a perfect example. 🍋☁️

Light, airy, citrusy, and designed to pair beautifully with cocktails or aperitifs.

Made with lemon juice, sugar, gelatin, water, and a touch of salt — then whipped patiently until it transforms into a soft cloud-like texture.

Small details like this can completely elevate a drink presentation and create a more memorable service experience.

Would you pair this with a spritz, a sour, or a martini? 👀

Edible snow? Yeah… cocktail garnish creativity keeps evolving. ❄️

This technique by transforms flavored oils into a light “snow” texture using maltodextrin/N-Zorbit — creating an aromatic garnish that melts instantly on the palate.

In this version: toasted brown rice + coconut.
Texture, aroma, presentation, and experience all in one.

Perfect example of how modern mixology keeps pushing cocktails beyond just flavor.

What flavor would you turn into edible snow? 👀

CRYSTALLIZED BASIL 🌿
by

One of those small details that transforms a cocktail or dessert into an experience.

Fresh basil leaves coated in sugar, slowly dehydrated until perfectly crisp. Aromatic, delicate, crunchy, and visually stunning.

We especially love using cinnamon basil — bringing together herbal freshness with subtle warm spice notes.

Simple technique. Beautiful result.

Craft matters.

The Ghost Spinach! 👻🌱 by
This is an interesting technique to create edible garnishes.

Would you use it?
