I’ve seen a lot of knives and enjoyed many beautiful dinners, but this experience will not soon be forgotten. Thank you to and everyone for the amazing date night. The Chianti, antipasti, Bucatini Carbonara…on and on, and the custom, on the fly, Gnocco Fritto (pictured here)…thank you for doing what you do; you made us feel like family.

A customer recently sent us this set of knives for sharpening. It’s fun to imagine how a set of knives like this was assembled over the years; years of travel, working, and adding one piece at a time to their treasured collection. Sabatier’s, Wusthof’s, Opinels, a Kraemer; a collage of fine cutlery. I have a feeling they’ll be quite happy when they receive them back; tips repaired, bolsters reshaped, and of course, wicked sharp.

This stud, Eric from , cuts a lot of meat and has for a long time. So I asked him, “What cutting task requires the most knife work?” His response, “Removing the hip or the aitch bone on any animal. It’s not hard (if you have a sharp knife...I assume he meant to say ;), but it’s more technical.”

Sharpened a personal knife and received this cappuccino cheese cake with cream on top and chocolate fudgy crunch on the bottom. I’d take that trade any day.

One of our longtime customers stopped by the knife shop to have his blades sharpened yesterday. Florian is quite the man. At 96 he drives his Cadillac out to the shop each spring, sharing stories of his life and speaking as proud of his 10 children as a man could. Cheesmaker, veteran, family man; he’s truly the salt of the earth. If you zoom in on his jacket you can see “Battle of the Bulge” printed...yeah, Florian was there, and in his humble way, he’ll tell you about it if you ask. Thank you Florian.
