Anthocyanins are reddish purple compounds that appear naturally in many fruits and vegetables like blueberries and beets, but also in cocoa. Red Velvet originated from a cocoa high in anthocyanins, that when reacted with buttermilk and vinegar, produced a reddish tint to the chocolate. We got our hands on some of that amazing cocoa and are looking forward to the lab smelling like chocolate for days ❤️ 🍫

When we work on flavor development at , especially to mask an active ingredient, we have pots of on standby. Some to drink, and whole beans to smell, to cleanse the palate between tastings. Also a good trick for 🍷.

The call for abstracts just dropped for the conference in Hotlanta next spring. We really enjoyed speaking in San Diego in Spring 2022! There aren't that many small businesses, particularly so that may be our topic this year. It's always a fun time at the convention 😁
