When shredding meat, remember this:
- heat loosens
- cold shrinks
Muscle fibers are loosened when meat is hot, making it much easier to separate them.
That's why shredding hot gives you a finer, longer shred.
Chilling meat causes the muscle fibers to contract and restrict.
When this happens, separating the meat into individual muscle fibers is impossible.
That's why shredding cold always produces a chunky, coarser shred.
Decide how you want your shredded meat to look.
It'll help you determine whether to shred the meat hot or cold.
