Due to the growth and need for fire safety equipment, his son Jason would later add fire sprinklers and kitchen safety systems enhancing

their level of service to the community. As Sheldon was preparing for retirement when he fell ill and later passed away, leaving the business in his son, Jason's, qualified hands. When Jason took charge, he took the business and ran with it. Here are 4 small ways to avoid commercial kitchen fires:

1. Keep the kitchen clean. Grease is highly flammable, and it collects on many surfaces and appliances throughout the kitchen, which can cause a fire to spread quickly.

2. Provide training. Make sure all of the employees know how to use the fire extinguishers as well as how to shut off the electricity and gas in order to fight small fires.

3. Have Class K fire extinguishers. Commercial kitchens require special extinguishers because they can extinguish fires caused by vegetable/animal oils and fats.

4. Have a plan. Make sure all employees know where the extinguishers, fire alarm, and exits are located, and create an exit strategy.
