Five things every restaurant should know about ice:

1. Ice absorbs odors and flavors from your freezer or bin. If it tastes off, it's probably not the water.

2. The size and shape of your ice affects drink dilution and pour cost, not just how it looks in the glass.

3. Health code issues with ice usually show up in the bin and dispenser first. Not because they're dirtier, just easier to spot.

4. Your ice machine works harder in the summer. More usage plus higher temps means more strain on the unit.

5. Bagged ice from the store isn't automatically better. It's often lower quality, with more air pockets and cloudiness than a well maintained commercial machine.

Little things like these can make a big difference behind the bar.
