Over the weekend, April and Logan, attended the Fort Covington Fire Department Craft Fair at Salmon River Central School!

They had a great time meeting new people, catching up with familiar customers, and sharing our maple products with everyone who stopped by our booth.

Before our maple syrup ever reaches our wholesale customers, we have to sample each barrel. Every barrel of syrup we produce is slightly unique, so we carefully pull a sample from each one before it leaves our sugarhouse. This allows us to check for color, flavor, clarity, and sugar content to ensure it meets quality standards.

By doing this, we can guarantee consistency for our wholesale partners while still celebrating the natural variation that makes pure maple syrup so special.

How do we know when sap becomes maple syrup? We measure it!

In these photos, we’re using a hydrometer - a tool that measures the sugar content of the liquid. We use a hydrometer to measure every load of sap that is unloaded at our sugarhouse and we are constantly using it to check our syrup while boiling.

Photo 1 - Fresh sap from the tree usually starts with a sugar content of about 2%, which means that there is a lot of water to remove before it becomes maple syrup.

To increase the sugar concentration to make it maple syrup, our sap goes through our reserse osmosis system and then cooks in the evaporator.

Photo 2 - When the sap reaches a sugar content of about 66–67%, it officially becomes maple syrup and is ready to be drawn off of the evaporator.

It’s a simple tool, but an important step to make sure every batch is just right!

Check out our Reverse Osmosis (RO) system!

This system is all about efficiency and is commonly used by many sugarmakers!

Our setup has 4 semi-permeable membranes that work to separate water from sugar and minerals...in this case it removes some of the water from the sap and leaves us with higher concentrated sap.

Typically, our maple sap has a sugar content of 1% - 2% and using our reverse osmosis system, we concentrate our sap to have a sugar content of 16% - 18%. For reference, maple syrup has a sugar content of about 66% - so using an RO saves us a lot of boiling time!

Less water in the sap means that it will require less time, money, and labor to boil the water out and turn our sap into delicious maple syrup! 🍁

As we get closer to the end of sugaring season, we’re trying something new this year - we are putting maple syrup back into the trees to save time next season.

Efficiency at its finest!
