Custom 1000 Gallon Offset on Skids, built for a Texas joint serving free beer while you wait.

Located in Spring, a Houston suburb rich with German history, Rosemeyer Bar-B-Q serves up Central Texas-inspired BBQ three days a week. Childhood friends Jordan Rosemeyer and Ben Maxwell run their highway-side food trailer with a curated menu that earned them a MICHELIN Guide Bib Gourmand and a spot on Texas Monthly's Top 50 BBQ Joints.

If you’re ever cruising through the Houston area, jump on the Grand Parkway Toll Road and stop by. They’ll have a cold one ready.

Before the line forms at Sunbird Barbecue, Bryan Bingham and David Segovia are in the pit room early, loading two 1000-Gallon Offset Smokers for service.

After spending a couple of years serving from a trailer on the outskirts, they moved into a brick-and-mortar spot in downtown Longview in 2023. After a run of early accolades, Sunbird landed on Texas Monthly’s 2025 Top 50 BBQ Joints list. The menu stays rooted in Texas staples like brisket and ribs, with an extensive sausage program that rotates regularly and inventive sides, with help from Bryan’s wife, Kimmy.
