This pan almost never existed… kind of like the side of the moon most people never see.

We were messing around with a prototype, nothing special. Basic hole pattern, regular handles. It worked, but it didn’t have a reason to exist yet.
So we changed the handles, made them lower profile so they actually made sense on a grill. Still just a prototype.

Then my dad looks at it and goes, “that looks like a moon helmet.” We laughed… then looked again. And yeah, he wasn’t wrong.

Right after that, Jacob (our shop foreman) walks in and asks if we’ve seen the new images from the far side of the moon. That’s when it clicked.

We went down a rabbit hole looking at Artemis mission photos, the side nobody really sees. Craters stacked on craters, different sizes, no wasted space. It looks random, but it all works.

So we scrapped the original design and started over. Rebuilt the whole thing around that crater pattern.
Not just because it looks badass, but because it actually solves the problem. You can finally cook on the grill without losing half your food through the grates.

I have a very nice person regularly ask me at one of the farmers markets if I’ve ever tried cooking tofu in one of our carbon steel skillets. It is supposed to be very sticky. Not being a regular eater or cooker of tofu I had to do a little AI research. To give myself the best chance, I went with extra firm tofu and drained it well - including the part where you press it for a while to remove excess moisture. Without thinking about the notion that most people probably tend to eat tofu because they’re not eating meat, I went ahead and cooked it in tallow. I feel a little shallow about using the tallow. But it is what it is. Just think about it as having the best of both worlds.

But I am totally going to eat the detritus.

For the record.
Pre-baked small red potatoes,smashed flat with my Modica Knives light but strong spatula and browned in my little 8 inch carbon steel pan. I don’t know what to call them.
I guess “smash browns” will work.

Check out this kick press we got at a junkyard. It is converted to run an a pneumatic cylinder with a foot pedal. We made this specific tooling to put the bend in our helper-handles and skillet handles that go on round pans. It makes it very repeatable. You notice that I re-position it a few times on each handle- it is designed to put more or less bend in the part depending where on the die you place the handle so the same tooling can be used for handles going several different size skillets.

I’m pre-seasoning a few skillets to get them ready for shipping. These skillets have been blued in an oven at 540° for about 40 minutes. We then wipe a very tiny amount of grapeseed oil all over the skillet, and then wipe it off before putting it back into the oven at 465° for 12 to 15 minutes. This process can be used on your skillet at home to re-season (no need to blue it, just oil and bake). Just make sure you scrub your skillet completely clean and smooth inside before beginning this process.
