🌱One of our sellers will have FRESH squash available tomorrow morning at our Local Growers Market! This is the first veggies of the year.

🥔If you are interested in the potato canning class, go ahead and get registered. It will be next Thursday. See pictures for details.

🫛We had a great time hanging out with our neighbors this past Tuesday. Franklin County High School brought out a summer camp class and canned green beans.

🐮 NEW Item BEEF TALLOW $4.50lb. This tallow is the real deal, check out the ingredient label. It’s the same tallow we are now using to cook our pork rinds.

🤓As mentioned last week we have 4 canning classes scheduled this summer, the picture below has all the information and how to sign up. These classes fill up pretty quickly so make plans and register soon!

This week’s SALE item:
🐟 SALMON FILLET $9.00lb.

🐽 BIG improvement to our PORK RINDS!
They are now cooked in 100% BEEF TALLOW, a more traditional, natural fat and a healthier option compared to the oils we used before. It gives them an even better flavor and crunch, too.

There is a slight price increase. They are now to $4.00/bag.

We’ve cooked a massive batch this week of all flavors.

🫙 Our cannery offers canning classes 🤓 each year, and I’ve attached this year’s class schedule below.

These hands-on classes are hosted right here at our cannery and led by instructors from UGA. You’ll head home with a jar from each class, along with a wealth of practical canning knowledge.

✅ Be sure to register early, as spots fill quickly. Registration instructions are included on the flyer.

Still a bit early in the year for all the fruits and veggies but the growers market is up and at it this morning with eggs, honey, sour dough, breads, and deserts! Vendors usually hang around til 12:00ish every Thursday. Y’all come support your neighbors.

This weeks sale item is a really good one!
HANGER STEAK $16.00lb.

Those of you who know what a hanger steak is, know how amazing they are. I have attached a google page to help educate those of you haven’t tried one. I like mine grilled like a ribeye.

Hanger steak, also known as "butcher's steak," is a flavorful, tender cut from the diaphragm area of the cow, historically kept by butchers for themselves. It's known for its rich, beefy flavor and coarse texture, and it benefits from marinades and high-heat cooking methods like grilling or pan-searing to medium-rare, followed by resting and slicing against the grain for maximum tenderness.
Characteristics
Flavor: Rich and beefy.
Texture: Coarse but becomes very tender when cooked properly.
Location: From the plate section, near the ribs and loin.
Other names: Butcher's steak, hanging tenderloin, onglet (French), arrachera (Mexican).
Cooking tips
Marinate: It takes marinades very well; marinate for at least 3 hours, but no more than 24 hours to avoid mushiness.
High heat: Cook quickly over high heat (grill or cast-iron skillet) to medium-rare (130-135°F) to prevent toughness.
Rest: Let it rest for 5-10 minutes after cooking.
Slice: Always slice against the grain at an angle for tenderness.
Serving suggestions
Serve with chimichurri sauce, fries, or roasted vegetables.
Use in tacos, fajitas, or sandwiches.
