It took 44,047 gallons of sap to make our 17th barrel the other night! That means we're averaging 47.11 gallons of sap to make 1 gallon of syrup. This is all dependent on the sugar percentage of the sap brought in; we've seen anywhere from 1.5% to 3.7%. We're not done cooking yet, and we're excited to see what we will end up with at the end of the season!

Thank you Lakeside 4H for coming out on this chilly day to learn about tapping trees and making maple syrup! We hope the kids had a lot of fun and learned a little bit about how to make some of this yummy golden goodness!

Last night we were able to have our first cook of the season!
The weather the next couple weeks looks promising so we are very hopeful to have many more cooks a head!

That warmer weather got us a little excited but we are hoping for a couple more weeks before go time!
