I think a lot of people are surprised by the shear amount of work that has to be done behind the scenes when building commercial kitchens & breweries, the glamour shots always get the likes, but if your work isn’t on-point from the jump, it’s gonna be a struggle. do the homework upfront - do the heavy work ONCE.
