Most ergonomic knife handles are just a shape you rest your hand on. They dont change how your wrist, forearm, and shoulder actually move when you cut.

Heres the thing, through. The standard chefs knife is a great design — just not for what most of us use it for. That straight-line handle-to-blade axis is built for thrusting and piercing. Field work, whittling, splitting wood with a baton — its genuinely the right geometry for those jobs.

But a cutting board isnt a thrusting motion. Its horizontal, repetitive, downward. So your wrist bends sideways to compensate, your fingers pinch the spine for control, and that strain adds up — whether youre dealing with early arthritis or just six hours into a prep shift.
