What is it? It's a sausage stuffer! Early New England farmers typically did the bulk of their butchering during the colder months. They made sausage so as not to waste smaller butchered bits that weren’t substantial enough on their own. Minced meat, fat, and spices were made into links, which were then cooked immediately or dried or smoked for longer-term storage. Funnels like this one were used to insert the sausage mix into casings.
