Cake vs. Yeast Donuts 🍩 What’s the difference?

Cake donuts are made from a batter-style mix similar to cake batter. They are denser and richer, with a soft interior and slightly crisp exterior.

Yeast-raised donuts are made from dough that rises before frying. They are lighter, airier, and fluffy.

The production process is different too 👇

Cake donuts are deposited directly into the fryer using equipment like a donut depositor. Yeast donuts require mixing, sheeting/cutting, and proofing before frying.

Cake donuts are often the starting point for new operators because the production process is simpler and highly consistent. Yeast-raised donuts require additional preparation steps such as proofing and dough handling. This process takes more time and requires more controlled conditions.

Classic recipes include cardamom and lemon zest. Traditionally served warm with powdered sugar and jam, aebleskiver lean closer to pancake dough than traditional donut batter.
