Oof, finally back from vacation, where I caught a nasty sinus infection. It's on its way out, so I finally felt up to finishing the Greek Orthodox church's knives and such. Definitely didn't feel roaring to go, but it's when you push past it and work anyway that you start healing. Or, I might just be a crusty fish tomorrow. Hopefully the former.

Never gotten a pair of Japanese gardening shears in before! I wouldn't risk damage by drilling the rivet, so I did my best getting the jaws open to sit right on the T8 wheels. The rivet was also very loose, so I gave it a serious hammering and it's back nice and tight, no more having to angle the handles to get the jaws to sit right. Ready for Bonsai duty!

The Private Collection for Peter and his bud at .georgemi_yassoofest , and the first batch of church kitchen knives, both done. The second half of church knives is in the tin pan, OOOOF. Got in a trio of really, really beat up Shun and Shun knock-offs in. Spent a LOT of time cutting them back with the 80 grit CBN wheel, then cleaned them up and honed. Back to singing through paper, and hopefully better appreciated. I've never seen that much metal dust in the water trough, even with axes!

Whelp, I finally found knives I hate as much as the Huusk. Sloppy primary bevel that gives up before the heel of the blade, blade angles towards the tip, making a flat cut impossible. The overall geometry is sloppy as well. Oh, and the steel kinda sucks. I guess these came from a bartender and food service catalog?

Un-frickin-real. As far as I can tell, this piece is 1.4116 steel, low carbon, barely any hard carbide forming elements. I was even wrong, it's a FIFTY dollar knife if you shop around. I'm honestly surprised I didn't get cut shaving with it.

This Narihira deba was BEAT. UP. When it came in. I'm told someone's roommate messed it up and then put it in the dishwasher (!!!!). The usual chips, and the ferrule was loose, the handle wood was so dry. I suspect this is tooooootally not him guys, it's the dastardly, elusory roommate.

Got grinding on it, which I started by hand and finished with my SJ250 water stone, as it needed a LOT of lapping. Once it was done, I tested it out, and it is OTHERWORLDLY. Just effortlessly and silently making paisley curls thru paper, and sung thru cardboard with barely more than its own weight. Conditioned the handle, and the ferrule snuggled down perfectly. Nothing feels better than bringing a beloved tool back and beyond the day it was forged.
