One Global, back from the dead, for a chef at Miss Kim , for The Knife Stop . I'm definitely not the premier source for thinning yet, but it's certainly better than the doorstop it came in with.

Ouch, this Tsuneshin Kyoto knife must've dropped HARD. Did some rough marking for reference, got the shape close to where I wanted, finished up and corrected the blade geometry. Gave it my usual 13 grits, and it's back to cutting hair-thin slices. Gave the handle some conditioning, too. Just look at that mirror finish!

I get work from some faaaaaaancy places sometimes. A friend of mine bartends here, at the AC Hotel Ann Arbor Downtown , so I did his paring and garnish knives. They even made a feature cocktail with my Sichuan chili oil!

Microtech Amphibian, a definite new one for me. I honestly thought the recurve wasn't intentional at first. Fast sharpening for M390, not as fast to reassemble. Lost one of the stand-offs (still say these should be press fit or glued), _and_ one of the screws. However, unlike the Bemchmade, there were only two standoffs, and two total types of screws that had different threads, so you couldn't put one where the other goes. Bonus round, extra screws in the other scales' pocket clip slot.

Will be buying a giant brick of a magnet AND a raised-edge work pad. Little bastards love to hide in my carpet. The lock system was cool as hell, a rod bearing fit over one of the standoffs, then a spring fit over the rod, and the rod fit in to a "cylinder" bored in to the lock button. That's real fu**in' neato. Fantastic engineering is no surprise from Microtech Knives .

A nice Zwilling Kramer in Cryodur came in with a ton of small chips all across the blade. Thinned it a tiiiiiny bit, then did the usual 13 grits. Mirror smooth and cutting curlicues again.

A spectacular, heirloom fit Seki Magoroku came in with some serious cladding rust and extra patina, as well as a decent chip in the blade. Ground it back as little as possible, then got started on the Wicked Edge. The burr just fell off, but I could tell I apexed. Cleaned up the rust, made sure the core steel had a good base patina, and put some oil on the handle.

Pretty Wusthof Icon from The Knife Stop . I've been trying to really nail down my serrated knife sharpening, and this sequence seems to really work. Serrated knives cutting chicanes thru paper like a conventional edge is a lot of progress.
