How to achieve the best quality of milk?

Bacterial contamination is the amount of foreign pathogenic bacteria in milk. When there are a lot of them, the quality of milk decreases, and then the price at which the plant will accept this milk decreases too.

The optimal indicator for the highest grade should not exceed 100 thousand units per cm3.

How to achieve this quality?

It is necessary to exclude the risk factors of bacterial contamination:

- poor-quality cleaning of the udder of cows before milking, violation of the milking procedure by the milkmaid;

- old milk pipeline, the presence of milk stone, poor-quality washing of the milk pipeline as a whole;

- sanitary condition of the milk hose and pumps;

- sanitary condition of the cooler tank (the risk of milk contamination is especially high when using open-type tanks, and in the case of a closed-type SIP-washing, there is a risk of accumulation of plaque and sediment at the bottom of the tank);

10 common causes of mastitis in the herd

Somatic cells are microscopic particles formed during the renewal of the glandular cells of the udder. Inside the udder, there is a constant renewal of cells — old cells die and are rejected. Therefore, somatic cells are constantly present in milk, even from a healthy cow.

The presence of a large number of somatic cells in milk leads to a serious decrease in thermal stability. This is especially important for the production of condensed milk with sugar and dry dairy products.

In addition, the increased content of somatics in milk indicates the disease of the herd with mastitis.

Causes of mastitis:

- Violation of the milking procedure
The milkmaid injures the cow's udder when she or he skips the first milk jets to control mastitis or incorrectly puts on and takes off the milking machine.

- Teat rubber

The most significant part of milk is milk fat. In milk, fat globules form a polydisperse emulsion due to the different size. The size and number of fat globules are variable and depend on the breed of the animal, the stage of lactation, diet, and many other points. The diameter of the fat globules varies from 0.1 to 15 microns ✅

A micron is a unit of length. 1 millimeter = 1,000 microns. For illustrative purposes: a human hair in cross-section is about 80 microns, which means that the fat globule reaches a diameter of no more than a quarter of a human hair 💇🏼‍♀

As for the diameter of the filter channels, they shouldn’t be smaller than the fat globule. The upper limit of the size of the fat globule is 15 microns. Therefore, the filtration range of 15-20 microns is the most effective in terms of the quality and safety of milk purification 🥛

Filters with a smaller channel diameter reduce the fat content of milk, which affects the cost of milk when it’s sold. If the fat content of the milk changes after filtration, then the declared fineness of purification does not correspond to reality 🙅🏼‍♂

How do I check the filter's microns on my own? 🧬

It is easy to check the microns of the milk filter — just compare it with a household water filter. The micron content of the water filter is 5 microns. With the naked eye, you can see the difference in the structure and density of water and milk filters.

🔹 If the milk filter is similar in density and structure to a water filter and looks like compressed cotton wool, then its filtration fineness is from 3 to 10 microns.

🔹 If the milk filter is looser in structure than the water filter and the polypropylene filaments are clearly visible, then its filtration fineness is more than 15 microns.
