When 8,000 Years of Tradition Meets Modern Engineering

Georgia has over 8,000 years of winemaking history. Traditional producers ferment whole grapes in qvevri, large clay vessels buried in the ground, using skin contact and manual cap management to produce amber and red wines.

During our recent visit to Georgia, we visited Avaliani Wine House and Restaurant. ღვინის სახლი და რესტორანი ავალიანი , where Letina VIP and other Letina tanks are installed, bringing the working principles of a qvevri into a modern, controlled environment.

How the system works:
• Traditional cap punching by hand is replaced with a pneumatic cylinder
• Three blades gently push skins and whole berries back into the juice
• The rotating sprinkler ensures even liquid distribution
• Cooling jackets and thermowells allow precise temperature control
• A programmable touchscreen control panel enables full process automation

The result:
• Qvevri style fermentation mechanics
• Modern control, cleanliness, and production reliability

A pair of horizontal stainless steel tanks delivered

Total volume: 86,000 L

The tanks will be used for storing paraffin in the candle production process. Each tank is equipped with internal heating pipes that keep the paraffin at the required temperature during storage and handling.

Designed and manufactured according to the customer’s drawings and process requirements.

Projects like this are a regular part of what we do at Letina – turning customer designs into fully built stainless steel equipment, ready for operation.
