Something a little different this morning.

This is a beautiful matched pair of steak/eating knives, forged finish SF100 steel and stabilised Walnut scales.

The Walnut scales are not only bookmatched on each knife, but the pair is bookmatched too, all four scales being cut side by side from the same block of timber.

The timber is a remnant of some supplied to me many moons ago by one of our most famous and renowned London gunmakers.

The 2mm-thick, Sheffield-made SF100 steel gets a forged finish on the spines of each knife, and both are steak-splittingly sharp.

As the photos show, the pair are supplied in a stunning leather roll.

The leather is a waxed finish, South American bull hide, as with my recent sheaths; it is truly a magnificent thing.

The interior features two flapped pouches, one for each knife.

All in all, it is a totally splendid piece of kit.

I am also loving the idea of the double rolls. In fact, the last set of six of these that I supplied were housed in three doubles, rather than one six. I imagine the theatre of having three (or however many) of these placed upon your set table, one between each couple of folk to share.

Headed for a nice weekend away, take a pair with you.

A brace of SF100 knives, handled in stabilised Walnut, and the leather roll, would be priced at £495.

#1423, SECARE...
.. with subtle but stunning red embellishments throughout.

The Secare model gets 5mm steel stock and a sharp end of 110mm.

They measure in at 230mm overall, and the blades are 40mm deep at their widest.

Full flat grinds, micro secondary bevels, stonewashed finish, the spines of the blades are also finished to enable ferro rod use.

Natural canvas Micarta scales over bright red G10 liners, which are 0.8mm thick.

The scales are secured, very secured, by a trio of flared 8mm stainless tubes.

The handmade leather sheath is a thing of beauty and purpose, too.

Utterly bombproof, made more so by a double row of complementary red stitching.

Now sold, but similar builds could be available, costing around £525.

Back in September, I started a project, a couple of traditional drop point hunter designs, I quickly realised their similarity to a couple of old Pat Mitchell back catalogue models, the 572 and 574.

I jokingly named them the 572/25 and 574/25. Here you see the smaller of the two, the 572/25.

3" blade of SF100, 1/8" stock with a tapering tang.

Stainless bolsters and a stunning section of Sambar cut for the scales. Those scales fitted over 0.4mm bright red liners.

The last photo shows a 572/25 blank beside an old catalogue photo of the original 572.

Leather sheath to follow.

Handle scales are of Norplex Absolute Zero blue G10, those fitted over GPS Agencies Ltd Neon Blue Starlight GITD liners.

The premium Wilebore Leather is also of outstanding quality and bomb proof.

This fine example of glowy goodness is NOW SOLD on my website: www.stuartmitchellknives.com/available

The latest three Secare.

Secare is a hard-use, no-nonsense, GP utility model. As such, it gets 5mm stock SF100 Sheffield steel.

Full flat grinds with edges of 110mm.

All get handle scales of TeroTuf, blue, lilac and orange. Here is a little product info from their own website: CIP TeroTuf, originally designed as a wear material for industrial use, was introduced to the knife industry as a new option for handles. This material has quickly become a preferred alternative to many other utilitarian handle options. TeroTuf is made with 100% polyester resin and fabric with no fillers, is non-toxic, chemically resistant to most cleaning supplies, and does not swell in water.

All three for the same client, with a splash of red tying the three together.

Scales are secured by a trio of flared 8mm stainless steel tubes.

Custom-made Heathen Kydex sheaths to keep them safe and secure, the sheaths featuring Kydex/Cordura drop belt loops.

Similar builds would be priced at £495 each.

Kicking off 2026!

A few months ago, I was contacted by new clients after they had visited restaurant JÖRO here in Sheffield and used the knives that I supplied to there.

A few years previous a Sweet Chestnut tree lost the battle with a storm in their garden. If they brought a chunk in, might I be able to make them a carving set handled in their timber?

They brought a chunk, alright, it was a good 20" x 20" and maybe 10" thick (photo shows it after I had started cutting it).

P120 for scale, the section standing upright on top is the section I cut out to use.

The set was completed a couple of weeks ago, just in time for Christmas dinner.
