A little demonstration... I'm not good at editing videos, so if you don't want to watch it all, skip to the cutting demo at the end.
This shows the final stoning and polish.

Another thing up for sale
1.8 kW mitre saw by Rexon
This little beast cuts to around 4 in deep and about 8in wide.
All in working order... 45 degree cuts left and right and rolls left and right too.
It's a bit dusty because it lives behind my table saw and I don't have an airline.
£40

Treat your knives with care. The cutting edge is delicate and easily damaged. Don't just throw it into the kitchen sink when you are finished with it. The edge can collide with either the stainless steel of the sink or with other utensils. Likewise when it is washed, don't just toss them back into the drawer.
Also be careful what you cut on. Steel draining boards, glass chopping boards and earthenware plates are the worst. They are just as hard as the steel your knife is made from and they will make short work of the edge of your knife or cleaver. The best thing to use is a wooden cutting board.
Also the best way to store your knives is a magnetic tool strip screwed to a wall or the side of a cupboard safely out of the reach of small people..
Chop safely.
