What I thought was going to be my bumper crop hive was wiped out and robbed and not by my bees.. Supplies will be tight this year. I have honey settling in buckets to check if it stays runny or goes solid, to determine next steps, that said i do prefer soft set honey, just a little extra work involved.

Just performed a stock take of honey available for sale. I have 11 x1lb jars of soft set honey and 19 8oz jars of runny honey. Everything is likely to be late this year what with the weather we have had. I will be looking to take the honey off in August this year, somewhat later than normal!

My bees swarmed Yesterday, found they had made home in some old equipment.. I guess people are suffering with hay fever remember if using honey to help you don’t need to use much, half a teaspoon a day is ample..

I have been asked how much honey should you take to make best use of the health benefits for honey. It's a great question and I suppose the answer is, it depends. From an asthma or hay-fever point of view I am guessing most people over use how much honey is used for health benefits. Feedback I have had is that half a teaspoon of honey a day is sufficient but appreciate many people will enjoy using more. The most cost effective If honey is being used for burns, sores of other skin complaints, honey can go further if made in to a honey cerate, a mixture of honey, olive oil and bees wax. There are other bee products that can be used for health benefits, such as pollen and propolis too. Hope that helps

Honey starting to crystalise? This is normal, all honey will crystalise eventually dependant on how it has been treated and stored. Most shop bought honey is micro filtered so will take longer to crystalise, the down side is many of the benefits of the honey are also filtered out.

Nearly all local beekeepers will only run their honey through a sieve to remove particles of wax or the odd dead bee! This allows for larger honey crystals. Honey eventually takes on the structure of what ever honey crystals are present, which will be determined by what the bees have foraged on. If bees have foraged on Oil Seed R**e, then this honey sets hard quite quickly, that does not mean you have to settle for a solid honey.

Solid honey can be turned into a soft set honey, by first warming the honey up to get it back to a liquid, then by adding 10% of a soft set honey you like the texture of, what we call a seed honey. This is stirred into the honey and given a stir every day for a couple of weeks. By this time the rest of the honey has taken on the structure of the seed honey.

So remember that seeing signs of honey crystalising in a jar is a good sign of a honey that has not been treated. Just give it a stir or a gentle warm though will keep what should be runny honey running. Or have a go yourselfs of making some creamed or soft set honey.
