The Abergavenny Baker

The Abergavenny Baker Eat, drink, chat, laugh & treat yourself to a day of baking or making fresh cheese and butter. Fresh. Simple. Delicious. £125 per person.

Classes are held for a maximum of 8 bakers allowing plenty of opportunity for discussion, hands on experience and questions. The day starts in the kitchen at 9.30am – with views up over the vineyard to the peak of the Sugarloaf Mountain. We’ll drink coffee and discuss the science that transforms a few simple ingredients into beautiful breads.

10am Roll up your sleeves and start mixing, kneading,

shaping and baking. I usually choose three different doughs to make four or five types of bread and you’ll have the option of working alone or in pairs. Late morning coffee and the first taste of your freshly baked bread.

2pm lunch

4.30pm aim to finish

Armed with your bag of bread, recipe cards, knowledge and experience you will leave The school as a baker (no longer a mere follower of recipes) – with the confidence to bake at home. The day finishes at 4.30pm. All ingredients, equipment, recipes and refreshments are included. Just bring a smile to give Rachael when you arrive!

Hidden in The Courtyard, just above Bean & Bread cafe on Lion Street in Abergavenny is a lovely little cookery school where you can spend a whole day mastering the skills to bake beautiful bread. From crusty focaccia and French fougasse to the traditional batch loaves of Swansea and the secrets of sourdough.

9.30am to 3.30pm Freshly baked bread for “second breakfast”, lunch with wine, refreshments throughout the day and a big bag of your bread to take home.

Mums & sons and mums & daughters sharing a day of baking. Traditional 🇬🇧 hot cross buns, fairy stencils on the 🇦🇹 date and walnut loaves (for the grandchildren, they claimed), 🇮🇹 Casatiello made with soft, slightly sweet dough and stuffed with mozzarella, Parmesan, crispy fried pancetta and peppered salami. And 🇮🇹 pane di Pasqua scented with lemon, orange & vanilla and decorated with 🦄 unicorn sprinkles!

Bake Påskereder (braided Easter nests flavoured with cardamom and lemon zest) 🍋 perfect for gifting mini chocolate eggs to family or friends on Easter Sunday. You’ll also bake traditional kanelbullar (cinnamon buns), solbullar (sunshine buns with fresh custard & blueberries) and seeded rye rolls for a smørrebrød lunch of smoked salmon, cheese, ham, pickles and dill dressing.

Whey granary bread with only 6 hours fermentation!!! 300g strong white flour, 300g granary, 30g malted wheat flakes, 2tsp salt, 1tsp instant active yeast, 100g warm water, 400g whey from the Little Hereford 🧀 we helped make on Wednesday . Good crust, open crumb and rich, delicious flavour. Perfect with a bit of cheese 😉

From warming the raw milk 🥛 in a HUGE vat, using bacterial cultures 🦠 to acidify the milk and rennet to coagulate the proteins to checking for a “clean break”, cutting the curds, cheddaring, milling, salting, pressing and aging…

A second smaller vat is for the soft cheeses Blue Monk (my favourite) and Other Monk with their furry exteriors and soft, creamy centres. Mmmmm mmm 😋

Never again will I complain about the cost of an artisan cheese. All hail the cheese makers 🙏 Dean’s cheese is worth every penny 🏆

Deliciously soft, fresh and creamy. SO DIFFERENT to shop bought paneer!!!

Marinaded in yoghurt, cumin, coriander, chilli and garam masala. Baked then grilled to make the perfect tikka!
