🍷 Oak economics are evolving. How are wineries adapting their aging strategies?
That was the central question of the technical seminar hosted this week by our Vivelys USA team in Napa Valley.
Together with wine industry professionals, we explored the key trends shaping aging strategies today:
🔸 The changing economics of barrels and their impact on winery technical decisions;
🔸 The new opportunities offered by oak alternatives in terms of precision, consistency, and flexibility;
🔸 The importance of considering oak and oxygen management together to
🔸 The need to evaluate results from both a sensory and an economic perspective.
A special thank you to Cara Morrison, Director of Winemaker at Sonoma Cutrer, for sharing her field experience and valuable insights, which greatly enriched the discussions throughout the morning.
👏 Congratulations as well to our experts Cecilia Cunningham, Clément Chivité, and Glenn Jeffries for the quality of their presentations and their engagement with participants.
And of course, thank you to all the wine professionals who attended for their questions, feedback, and the quality of the exchanges.
These moments of collaboration and discussion are essential to advancing winemaking practices and addressing the challenges of tomorrow.
