Blade Details
SPG2 Damascus Steel. The core material, SPG2 (also known as powder stainless high-speed steel) excels in the four major conditions for a blade: “high level of hardness, high level of toughness, abrasion resistance and corrosion resistance”. Hardness 61 HRC
Blade Design
I have designed an extension for the typical Japanese sound style. An eyelet is placed around the index finger at the start of the handle on the blade. This ensures a harmonious cutting motion for the chef. His full hand can therefore be in the handle area and on the blade.
Handle The knife handle is made from an olive branch and dark wood Buffalo Bufa. The branch fell from a 1.100 year old olive tree placed in Javea /Alicante in Spain. Fallen branches can be legally selected. I fixed the style to the blade using an elaborate shaping process and the finest 6000 grind. The style was highly polished at the end. Then I massaged the style with a native Lendig oil. This preserves an olive wood knife handle for decades.
Its' elegant design is easy to grip and has a feeling of Japanese ambiance.
Sharp-Edged Blade
The excellent steel has a “Hamaguri-ba finish”, which is the shape of Japanese chef knives. Done with one of the most sought-after Japanese whetstones for the sharpest knife blades in the water range and a high degree of experience.
