Frying oil is easy to overlook, but its quality has a direct impact on your products, your customers and your costs.
Oil that is overused can affect the colour, crispiness, flavour and texture of fried food. It may also create food-safety risks. Changing it too early, however, means unnecessary waste and higher operating costs.
So how can you control frying-oil quality?
โข Keep the frying temperature stable โ around 175 ยฐC / 347 ยฐF is a practical guideline.
โข Remove food residues and filter the oil regularly.
โข Protect the oil from water, salt, spices, light and unnecessary exposure to air.
โข Watch for warning signs such as darkening, foaming, smoke, unpleasant odours or changes in taste.
โข Measure TPM โ Total Polar Materials โ at defined intervals to support clear, consistent decisions.
โข Record the results and set clear limits for continued use, filtering and replacement.
Good frying-oil management is not about guessing or changing oil out of habit. It is about creating a repeatable process that connects measurement with action.
