1、 Inappropriate storage environment
The humidity is too high
If black garlic is exposed to a humid environment (such as relative humidity>75%) during storage, its roots are prone to absorbing moisture, providing breeding conditions for molds (such as Aspergillus niger, Penicillium, etc.).
Temperature fluctuations
Frequent temperature changes may lead to the generation of condensed water, accelerating the germination and diffusion of fungal spores.
Poor ventilation
Sealed packaging or excessive stacking can hinder air circulation and create a localized high humidity microenvironment.
2、 Production process defects 2
Incomplete sterilization
If the fungal spores in the raw garlic are not completely killed during the fermentation process of black garlic, residual bacterial cells may recover and reproduce during subsequent storage.
Poor control of moisture content
The moisture content of finished black garlic exceeds the standard (usually required to be ≤ 20%), which can easily cause root mold.
