Fill some salami with us!🐷
We always fill our salami with a filler. They are quick and easy, and offer great control to the user.
This model is a Trespade 5kg Stainless Steel Sausage Filler - Made in Italy of course. Part of their professional range, this is one of our heavier duty sausage filler offerings, constructed with hardened steel gears, heavy duty shaft and an air valve on the plunger.
We have a huge range of sausage fillers to meet anyone’s needs. Different sizes are available, vertical or horizontal orientation, and different finishes too. All include a two speed gear box, and include 4 different size nozzles to suit small or large casings.

The casings used are dehydrated collagen casings. They are natural product (in this case beef collagen) that are formed in to a shape and dehydrated. These are tied on one end. They perform the same as fresh casings, but have the advantage of being uniform in size and quality, they’re stronger than fresh casings, don’t require cleaning, and no smells! Simply rehydrate for a couple of seconds - we use wine - and fill!

This week we had our first salami class of the season! 🐽
Thank you very much to everyone that booked in to join, and we are thrilled to see that the interest in continuing this fantastic tradition is still going strong! We have a busy schedule over the next couple of months. There are still limited positions for Monday July 6th 2.30pm. Book in now or miss out!

🔉Sound on for this one! Applying netting onto your salami has never been easier! Using our special tube with a conical top, the net is stretched out, allowing you to apply a tight as possible netting over your salami.
Netting your salami and small goods provides constant and even pressure, helping to provide a uniform texture as well to prevent air pockets. Netting also helps to keep a nice round shape.
Netting application tubes come in a range of diameters to suit different size nettings and salami, capocolli and more.

The SALAMI HAND CRIMPER 🐷 A lifesaver when tying off salami casings! The crimper is used to apply string and close both ends of the salami casings, especially the collagen casings.

What we love about our collagen casings is that they are on a continuous reel, and can be cut to any length, they are extremely strong and only need to be dipped (we use wine) for a couple of seconds to rehydrate.

Salami crimpers and staples are available online and in store. We also are fully stocked with all of our salami casings, netting, Cryvac bags, mincers, sausage fillers and more! Delivery is available Australia and New Zealand wide.

The Art of Pork: Half Pig Breakdown Masterclass with Joe’s Quality Corner x Costante Imports 🐷

Join Frank from Joe’s Quality Corner, a family run butcher located at the Preston Market since 1986.

Join us for an in-depth demonstration as we break down half a pig from snout to tail, identifying each cut of pork while exploring the specific techniques and preparation methods required for turning each cut into Salumi.

This class will give a fantastic overview of the concept of curing whole cuts of meat and breaking down and utilising the whole animal, specifically teaching to process of making:

At the end of the class, we will sit and enjoy a meal of all the cuts of meats demonstrated, fresh sausages, bread, cheese, wine and a good chat and some laughs.

Arancini Makers 🤩
Our Arancini Moulds are available in round, pyramid and oval all made my Arancinotto in Sicily.
These moulds allow you to make the most perfect professional looking Arancini in 6 simple steps.
1. Fill the base of the Arancinotto with cooked arancini rice.
2. Place lid on the base and plunge down.
3. Remove plunger and fill with a generous amount of your favourite filing.
4. Cover filling with a thin layer of rice, and tamp with the back of the plunger.
5. Take the cover off and gently un-mould your arancini from your Arancinotto.
6. Done! Crumb, Fry and Enjoy!

The perfect gift for Mum this Mothers Day - an Electric Pizzella Iron 🧇💛

Pizzelle are wafer biscuits typical of the Abruzzo region. All our irons are made in Italy. We carry a range of stove top and over 25 electric Pizzelle and waffle irons with different shapes and patterns! We even stock CBE’s Pizzelle Recipe Book, which contain recipes for different sweet and savoury Pizzelle.

Our Pizzella Irons are made of cast aluminium, meaning it will not chip in your food and is extremely long wearing. Irons simply need to be well heated and brushed with oil and will season overtime with use.

Puntarelle alla Romana 🥬💚
Puntarelle are a variety chicory, not only do they look beautiful but their delicious bitter taste make the perfect salad! The shoots are julienned using our taglia Puntarelle (Puntarelle cutter), then washed in cold water to curl and crisp up. A simple dressing of anchovies, garlic, homemade vinegar and extra virgin olive oil (recipe from ) was whipped up in our beautiful Carrara Marble Mortar and Pestle, and lunch was ready!!

Using our little ‘Mincy’ to make some delicious ‘biscotti di latte’.
Perfect to dip in an afternoon cup of tea or caffe latte.
The Mincy is a small mincer, it comes with 2 size plates to mince meat, a sausage funnel, some discs for pasta extrusion, and a disc to extrude biscuits - which we have used today. It has a handy suction cup to secure on to your bench top.

Arrosticini BBQs are back!

The BBQs are double skinned to retain heat, while the perforations help draw in oxygen to feed the charcoal, meaning less charcoal needs to be used overall.
The BBQs are also the perfect width of fit the meat on the skewer, so the meat will get perfectly cooked but the bamboo skewer won’t 🤩
The legs can also be removed so it can be easily transported or put away for storage!!
