This is the job of our roaster Mark, who operates our custom Brambati coffee roaster. Reaching all the way to the ceiling, our state-of-the-art roaster ensures we deliver consistently great coffee every time.

COFFEE WASTE → GARDEN GOLD 🌱

At Botero Roastery, nothing goes to waste.

COFFEE HUSKS
When green coffee is dried at origin and later roasted, natural husks are released from the bean. We capture all of these husks during roasting and make them available to our community - free to collect and perfect for the garden.

COFFEE GROUNDS
Our café also produces plenty of used coffee grounds, which we share with local gardeners and farmers at no cost.

Both are picked up so quickly, they rarely last the day.

If you garden locally, feel free to stop by the roaster and take what you need 🌿

Our May single of the month ☕ has been roasted!

BRAZIL FAZENDA PEDRA PRETA
Region - Serra da Mantiqueira
Varietal - Acaia
Process - Natural
Production - Regenerative Grown

Fazenda Pedra Preta has been producing coffee for over 100 years, across five generations of the Capistrano Ferreira family in Brazil’s Serra da Mantiqueira. Set between protected forests rich in native wildlife, the farm is also one of the region’s largest preservation areas.

Today, brothers Eduardo and Otávio Ferreira are evolving the farm through regenerative practices, combining tradition with agroforestry. Their Tropicália project uses intercropping to create a thriving ecosystem - improving soil health, supporting biodiversity, and naturally managing pests.

The result is a naturally processed coffee that reflects its environment: bright stone fruit and lemon acidity, a smooth buttery body, and notes of caramel, cashew and soft florals.

GUATEMALA FINCA EL DURAZNO

Located in the volcanic highlands of Santa Rosa, Guatemala, Finca El Durazno and a collective of 20 producers continue a coffee-growing legacy spanning over a century. Led by the Castillo family—now in its fifth generation under Emanuel Castillo—the group also supports smallholders through the “Cosechando Esperanza” (Harvesting Hope) program.

Traditionally washed using the farm’s wet mill, producers are now experimenting with natural and honey processing, creating more diverse flavour profiles. Sustainability is central, with a five-year plan focused on environmental education, responsible chemical use, waste reduction, and community development through training in finance, agronomy, and sustainable practices.
