Sweet, smoky salmon jerky made right in the BenchFoods dehydrator
This is one of those snacks that feels fancy, but is actually so simple once you know how to do it. Start with fresh salmon, slice it into strips around 2cm/0.8in wide and 5–7mm/0.2–0.3in thick, then let the flavour do the heavy lifting.
For that smoky maple finish, marinate your salmon with maple syrup, soy or tamari, liquid smoke, smoked paprika, garlic, black pepper and a little lemon juice. The maple brings the sweetness, the liquid smoke gives it that deep smoky edge, and the dehydrator turns it all into chewy, rich, high-protein goodness.
Lay the salmon strips evenly on your BenchFoods trays, leaving space for airflow. Dehydrate at 63–68°C/145–155°F for around 4–7 hours, depending on thickness and texture, until the jerky is firm, chewy and full of flavour.
Let it cool before storing, then keep it in the fridge and enjoy through the week.
