It's "Wind-back Wednesday", and one of my favourite old pics from my Chef πŸ‘¨β€πŸ³ days is this pic taken when I was the Corporate Executive Chef for Convotherm combi ovens here in Australia. I'm the first chef on the left of the pic.

Moffat who are the importers and distributors of the Convothem brand were also a major sponsor of the Bocuse d'Or Australia team when this pic was taken, and the young chef standing next to me is none other than George Calombaris who represented Australia at the prestigious Bocus d'Or culinary competition in Lyon, France, in 2003 achieving a respectable 16th place and marking a significant early career achievement, even bettering previous Australian results, before becoming famous as a MasterChef judge.

George competed at age 23, a major milestone that taught him about artistry and precision, and later served as an ambassador for Bocuse d'Or Australia, mentoring younger chefs.

I'm so proud of my cheffing background, my global network of friends I've made over the years, and my experiences. I am happy to share my experiences and knowledge with any of our CaterCentral clientele looking for a chefs advice on their commercial kitchen equipment needs; no matter the brand, I'm your go-to-guy for that specialist industry knowledge that is unmatched in South Australia.

As a professional Chef with more years of experience than I care to admit πŸ˜† you might be right in thinking I know a bit about chefs knives πŸ”ͺ

I was very fortunate to be given a very special custom forged knife for Christmas from my wife, and I just wanted to give a shout-out to the maker of this knife who is a Barossa Valley local small business and deserves all the recognition that I can heap upon him.

My new knife is by far the best knife I’ve had in my long career and is a testament to the skills of this local artisan.

Barry Gardiner is a local Angaston resident who owns and operates from his tiny workshop at Seppeltsfield.

Take it from me; if you are after a truly magnificent knife, then check out Barry’s work at either his workshop or at Sunshine Barossa Australia who aslo stock his knives.
