Around the world, chocolate makers are finding creative ways to use more of the cacao fruit.

The beans become chocolate.
The pulp can become juice, vinegar, syrups, fillings, or beverages.
The husk can inspire teas, infusions, compost, and other value-added ideas.

This is exciting for chocopreneurs because it shows that chocolate making is not only about one product. It is about creativity, reducing waste, supporting farmers, and building more value from cacao.

This week, 𝗖𝗼𝗰𝗼𝗮𝗧𝗼𝘄𝗻 is featuring 𝗔𝘆𝗶𝘀𝘀𝗶 𝗡𝘆𝗲𝗺𝗯𝗮, Founder and CEO of 𝗘𝗠𝗞𝗔𝗢 𝗙𝗢𝗢𝗗𝗦 𝗜𝗡𝗖., a woman- and minority-owned chocolate company built on 𝗲𝘁𝗵𝗶𝗰𝗮𝗹 𝘀𝗼𝘂𝗿𝗰𝗶𝗻𝗴, 𝘀𝘂𝘀𝘁𝗮𝗶𝗻𝗮𝗯𝗶𝗹𝗶𝘁𝘆, and 𝗰𝗼𝗺𝗺𝘂𝗻𝗶𝘁𝘆 𝗶𝗺𝗽𝗮𝗰𝘁.

Ayissi’s journey began on her family’s cacao farm in 𝗖𝗮𝗺𝗲𝗿𝗼𝗼𝗻, where she saw the need for farmers to receive more value and recognition for their work.

Through 𝗘𝗺𝗸𝗮𝗼, she connects chocolate lovers to the source with premium single-origin cacao, direct farmer relationships, and QR-code traceability.

Now, Emkao is expanding from Vancouver, Canada to 𝗕𝗶𝗻𝗴𝗵𝗮𝗺𝘁𝗼𝗻, 𝗡𝗲𝘄 𝗬𝗼𝗿𝗸 to build a bean-to-bar chocolate and cocoa ingredients facility. The new project is designed to create local jobs, host tastings and events, and connect the Binghamton community to cacao farmers in Cameroon.

A roast runs a little longer than planned.

A batch develops a flavor you did not expect.

At 𝗖𝗼𝗰𝗼𝗮𝗧𝗼𝘄𝗻, we believe every step in the bean-to-bar process is a chance to learn. From sorting and roasting to refining and tempering, each batch gives chocolate makers new information about the cocoa beans, the equipment, and the process.
