Additionally, metal filters have the advantage of extracting more oils from the coffee, which can provide a more oily sensation on the palate. Each material has unique characteristics that can affect the temperature, extraction of coffee oils and, consequently, the brewing performance of the drink. Now, can it change the taste of coffee?
The V60 preparation method, for example, has several possibilities for materials in the same equipment: ceramic, glass, a more resistant plastic, titanium, copper and even gold. It's really impressive to know whether each of them will bring a different experience to your cup, but let's understand more about that.

PLASTIC, GLASS AND CERAMIC
Using the same classic example as the V60 preparation method, material variation in this equipment can affect temperature performance and thermal absorption. In other words, ceramic tends to absorb more heat, especially when heated well, while plastic is less prone to temperature changes.
Furthermore, some people question whether prolonged use of plastic can result in micro extractions of plastic in the drink, bringing a plastic taste to the coffee. But it is believed that well-developed equipment undergoes rigorous testing to ensure its safety.

➡️ Pre-infuse. It is during this stage that the coffee will release all its aromas and flavours. The purpose of this step is to hydrate the ground coffee particles, as each one will have a different absorption time, depending on the grinding process. So, just throw water to cover all the coffee powder and wait for 20 seconds.
➡️ Now you can add the remaining water, in constant circular motions, to complete the extraction. The whole preparation process should last between 2 and 3 minutes.

Resulting from a natural crossing between the Sumatra and Bourbon Vermelho cultivars, Mundo Novo was discovered in Mineiros do Tietê, in 1952.
Its seeds were planted in a city called Mundo, São Paulo state, where Embrapa researchers selected the parent plants that gave rise to the Mundo Novo cultivar – a reference to the city where it was developed.
Faced with the high performance, Embrapa invested in the varietal, multiplied the seeds and distributed Mundo Novo coffee to the market. Since then, the varietal has been one of the main Arabica coffees in the country, along with Catuaí coffee.
Such success is due to special features: high productivity and high adaptability to different coffee growing regions. According to Embrapa, Mundo Novo coffee presented productivity up to 200% higher than usual!
The plantations above 800 meters of altitude produce the best coffees, but the plants adapt well to climatic variations. Therefore, it is present in all coffee growing regions of Brazil, including the Cerrado.
Mundo Novo has a sweet and striking flavour, medium body, intense roasting scent and medium acidity.
